Open-Faced Omelet with Feta, Roasted Tomatoes and Spinach

An omelet with open face, thin paper with just about anything you like is stacked my new favorite breakfast. Lately, my go-to is this incredible combination of roasted tomatoes with spinach and feta cheese.

Grape tomatoes in the oven with a little oil, salt and pepper and fresh herbs fried (Can you believe that my herbs are still alive in my garden!) Are you sweet as candy. The salty feta cheese crumbled on top is the perfect complement, and really packs a lot of flavor - a little goes a long way.


Athenos came to me and asked me to share a recipe with its feta because I love feta and shares recipes with tons of cheese. Simple - I knew this was the recipe that I had to do! Sometimes I use it instead of spinach arugula, can really use all the vegetables that you like. I prefer to buy the song and I collapse, because I think it has the best flavor and texture is moist and perfect.

Tortillas are fast enough to do, but if you need something quicker to jump fried tomatoes for 5 minutes and let them raw, tasty breakfast.
