Comfort in a bowl! This dish is a Latin cross between a soup and stew. If you want to eat like soup, served with some fresh avocado on top. If you prefer, over rice, try it with my yellow rice America (I had both!).
The inspiration for this dish comes from the signature Puerto Rican rice and beans dish. A combination of rice, pigeon peas and pork, fried cooked with Puerto Rican style. All these flavors just in crock pot and leftovers freeze cooking well.
(Also known as pigeon peas) Loafers are one of my favorite vegetables you can buy canned or dried, for this recipe I used canned Goya.
Yum! This is full of flavor, tons of vegetables and so good! This is a real gem in my book. If you do not eat pork, chicken breast would be a great job. Have fun!
