A medley with roasted winter squash, sweet, spicy and delicious smoked flavor - so good and a big hit with my husband!
My plan was to make last night to pumpkin soup for dinner, but wanted to try this recipe, so instead I made served with a side a fried chicken - Tommy raves. He is a big fan of sweet winter squash, but I tend to like more delicious food, was the perfect balance.
You can use any winter squash, I have half a small butternut, buttercup squash and Delicata. If I everything I have used two pans, but I am planning to use the rest for another recipe.
Shelling, I cut a potato peeler and a sharp knife into small cubes. This makes enough spice mixture for some recipes, you can can store the rest in a plastic bag to baked or grilled to make fried vegetables.
